Soo yummy from a cookbook I bought with recipes specifically for only 2 people. (Back in the day when Ryan and I didn't have kids!) You could use this with tortellini or ravioli.
Serves 2
1 pkg (9oz) refrigerated chicken-filled tortellini (or whatever variety you like)
1/2 cup frozen peas
3/4 cup half and half
4 tbsp parmesan cheese
2 tbsp cream cheese
In saucepan, cook tortellini and peas as directed on tortellini package. Drain and cover to keep warm. In same saucepan, mix half and half, 2 tbsp parmesan cheese, and cream cheese with whisk. Cover and cook over low heat; stirring constantly until smooth. Stir in cooked tortellini and peas. Cook 1-3 minutes until heated through. Sprinkle individual servings with remaining parmesan cheese and some pepper.
