Stuffed Shells

This recipe was given to me by my sister-in-law, Tara. It's super yummy!

Serves 4

1/2 box jumbo shells
1 (27 oz) jar spaghetti sauce
1 egg
15 oz ricotta cheese
2 cups shredded mozzarella cheese
3/4 cup parmesan cheese
1 1/2 tsp dried parsley

Preheat oven to 350°. Cook shells until slightly firm. Spray 9x13 baking dish with cooking spray. Beat egg and add cheese (save 3/4 - 1 cup mozzarella for later) and parsley. Put a little sauce on bottom of pan. Fill shells with cheese mixture and place in baking dish. top with remaining sauce. Cover with aluminum foil and cook for 30 minutes or until heated through and cheese is melted. Uncover, and top with remaining mozzarella cheese and cook uncovered for additional 10 minutes or cheese is melted on top.
