Zucchini & Mushrooms with Italian beef tomato sauce


Yummy option to having pasta.

Serves 4

1 lb ground beef, 10%fat or less
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp onion powder
26 oz can sugar free tomato sauce (Hunt's)
4 cups sliced zucchini
2 cups sliced mushrooms
4 tbsp parmesan cheese

In a large skillet fry the ground beef and break it up into small chunks. Add the salt, black pepper, garlic powder, and onion powder. When it is well browned stir in the tomato sauce. Simmer for 5 minutes or so.
Meanwhile, steam zucchini and mushrooms for about 5 minutes or until tender crisp. Top the veggies with the tomato sauce. Then sprinkle with parmesan cheese.
