This is a sweet crepe recipe. Use this recipe for sweet fillings, like strawberries and whipped cream. If you want to use savory ingredients for the filling omit the sugar and vanilla.
Makes 12 Crepes
2 cups milk (powdered works fine!)
2-3 eggs
1 1/3 cups flour
1/4 tsp salt
3 tbsp sugar (optional)
1/8 tsp vanilla (optional)
Combine all ingredients in a bowl and mix well (not lumpy). Spray a frying pan with nonstick spray. Heat pan to medium low. (low heat is important for crepes). Fill a 1/4 cup measuring cup with batter. Pour batter into pan, swirling to creat a thin layer. Cook until crepe is golden around edges and dry in center (about 45 seconds). Flip crepe carefully, and cook until golden (about 10 seconds). Repeat with remaining batter. Fill as desired.
