Grandpa Wasson's Buttermilk Pancakes


This recipe is from my husband's late Grandpa Wasson. These were cooked as tradition every year around christmas and New Year's until the last couple of years of his life. As far as I'm concerned these are the best buttermilk pancakes I've ever had!!!

Makes about 12 pancakes

2 eggs
2 cups self-rising flour (regular flour is okay, just add another tsp of baking powder)
3 cups buttermilk
1 tsp baking powder (remember to add the extra if using regular flour)
1 tsp baking soda
1 tbsp bacon grease

Beat eggs. Add all other ingredients and mix well. Best when served hot off the griddle!!
