Caprese Salad


I llloooovvveeee this salad. It's so light and satisfying. Make sure you use fresh, ripe tomatoes. They're the best. I actually use less mozzarella cheese, but that's my preference. Some people add balsamic vinegar to this too, but I'm not a vinegar girl.
Makes 4 servings

4 tomatoes, diced
4 oz mozzarella cheese, diced
fresh basil, to taste
salt and pepper to taste

Mix and let sit for about 10 minutes before eating.
