Beef and Pork Barbecue Sandwiches


This one is a family favorite. We love it! Although it makes 15 sandwiches, it refrigerates well and makes great left overs.
Makes 15 sandwiches


1 1/2 lb beef chuck roast (or cubed stew beef)
1 1/2 lb pork loin, cubed
1 large onion, chopped (1 cup)
1 medium bell pepper, chopped (1 cup)
1/2 cup packed brown sugar
1/4 cup cider vinegar
1 tbsp chili powder
1 tsp salt
1 tsp ground mustard
2 tsp worcestershire sauce
1 6 oz can tomato paste
15 sandwich buns


Spray 4-5 qt slow cooker with cooking spray. This step is important because it gets baked on and is really hard to clean afterwards.
Trim fat from beef and pork. Cut beef and pork into 3-inch pieces.
In cooker, place beef and pork and remaining ingredients except tomato paste and buns.

Cover and cook on low for 8 - 10 hours.

Remove beef and pork from slow cooker, using a slotted spoon. strain liquid in cooker; reserve. return cooked veggies to cooker. Shred meat, using 2 forks. Return meat to cooker. Stir in tomato paste. Stir in 1 - 2 cups of strained liquid for desired moistness.

Increase heat setting to high. Cover; cook 10 - 15 minutes longer or until hot. To serve, spoon 1/3 cup meat mixture onto each bun. Meat mixture can be kept warm on Low heat setting up to 2 hours; stir occassionally.
