Great vegetarian dish! So yummy you don't even miss the meat! FYI: have everything chopped and ready before you start. Once in the wok it moves very quickly. You don't want to overcook the vegetables.
2-4 Servings
2 cups water
1 cup rice
1 tbsp sesame oil
2 cloves fresh garlic, minced
2-3 scallions diced
1 small knob of fresh ginger, minced
1/2 small head of cabbage (napa cabbage works best), chopped finely
1 cup sliced mushrooms
1/2 cups frozen peas
1/2 cup corn (frozen or canned)
1/4 cup orange juice
Cook rice according to package directions and then transfer to warm frying pan or wak. coat the bottom of the wok with a thin layer of sesame oil.
Stir fry the cabbage, corn, peas, and mushrooms until tender. Drain if needed. then add in the rice and the remainder of the ingredients and toss over a warm heat. Season with soy sauce, and pepper.
