Salsa Verde Soup

A couple of friends and I tried to start a recipe club to share recipes...but no one else was interested. This is one of the recipes that I aquired from this.


1 large can (28 oz) green chili enchilada sauce
3 cups cooked chicken, cubed
1 onion
1 can white beans
4 cups chicken broth
1-2 tsp cumin (based on preference)
1 can cream of chicken soup (can substitute for sour cream as well)
1/2 - 1 cup heavy cream (if using sour cream use the smaller amount)
1/4 cup uncooked rice
spices to you're liking (salt, pepper, garlic powder is what I use)


Put sauce and broth in pot and bring to boil. Add onion, cumin, spices, and rice. Let simmer until rice is cooked. Add chicken, cream of chicken soup (if using sour cream do not add here. Add it later), and beans. Simmer for 10 minutes. Take off heat and add heavy cream and sour cream (if you didn't use the chicken soup). Serve with Tortilla Chips.
