Lemon Syrup Cake

We have a lemon tree in our back yard and I have been searching and searching for recipes for lemons (besides lemon bars and lemonade). Here is one REALLY yummy one.


Lemon Syrup Cake

For the cake:
3 eggs
3/4 cup sugar
3/4 cup butter
1 3/4 cup self-rising flour
grated rind and juice of 1 lemon

For the syrup:
3/4 cup sugar
juice of 3 lemons
4 tbsp water

Preheat oven to 350 F. grease and line the base of a deep 8 in cake tin.
Put all the cake ingredients in a large bowl and beat until light and fluffy. Pour the mixture into the prepared tin and bake for 1 hour until golden and firm to the touch.
Meanwhile, place the syrup ingredients in a pan and heat until sugar dissolves. Bring to a boil and boil for 2 minutes.
When the cake is cooked, pour the hot syrup over the cake and leave to soak for at least 1/2 hour.
