This soup is the recipe from Chili's Restaurant. My friend gave this to me, I don't know how she came up with it...but it's good!!!
Makes a big pot worth...not sure how many servings though
4 cups cubed, peeled potatoes
4 cups chicken broth
2 stalks celery
1 onion
2 tbsp butter
2 1/2 cups milk
1 1/2 cups velveeta cheese
basil
garlic powder
salt and pepper
*bacon (fried and chopped)
*green onion
*grated cheddar cheese
Directions:
Boil Potatoes in chicken broth until soft. Saute celery and onion in butter until soft. Mix with potatoes and mix. Add milk and cheese until melted. Season to taste.
*optional: top with bacon bits, green onion, and cheddar cheese
A friend passed it on to me, and yes it's the best potato cheese soup ever!! :)
